20-minute Easy Tofu Stir-fry

Ingredients
1 package of Trader Joe's frozen brown rice1 package of Trader Joe's red, yellow, and green peppers1/2 package of Fresh & Easy Extra Firm Tofu1.5 tbsp of EVOO to heat veggies (optional)6 tbsp Trader Joe's Gyoza Dipping Sauce
Directions
First I heated the veggies in a skillet over medium high heat with 1.5 tbsp of EVOO. I realize now that I probably could have cut that amount by half. Once these were ready, I added half a package of tofu. You could add an entire package, but this was all I had leftover. I also added 2 tbsp of gyoza dipping sauce to cook with the tofu. I chose this over TJ's soyaki because it was lower in calories, but the soyaki works just as well. While the tofu was cooking, I heated the frozen brown rice for 3 minutes in the microwave. Once tofu was heated through, I added brown rice and remaining 4 tbsp of gyoza dipping sauce.

Makes about 4 1-cup servings.
