South Beach Diet - Chicken Soup with Kale

1 tbsp extra-virgin olive oil1 thinly sliced small sweet onion2 thinly sliced celery stalks2 minced garlic clovespinch of saltpinch of freshly ground black pepper1 large bunch chopped kale leaves1/2 lb cubed boneless skinless chicken breast4 cups lower-sodium chicken broth3 tbsp finely chopped parsley
In a medium saucepan, heat olive oil over medium heat. Add onion, celery, garlic, salt, and pepper. Cook, stirring occasionally, until onion softens, about 7 minutes. Add chopped kale leaves. stir and cook for 1 minute. Add cubed chicken; stir and cook for 1 minute longer. Add chicken broth, bring to a simmer, and cook until chicken is cook through, about 7 minutes. Stir in chopped parsley. Serve hot.
