Parmesan Dijon Chicken

Ingredients
1 Chicken Breast2 tsp Dijon Mustard2 tbsp Grated Parmesan CheeseSalt & Pepper to taste (not in nutritional information)Crushed Red Pepper Flakes to taste (not in nutritional information)
Directions
Trim all excess fat from the chicken.

Season with salt, pepper, and pepper flakes (if you desire)

Spread half of the Dijon on one side of the chicken breast, then sprinkle half of the cheese.

Put that side down on a pan sprayed lightly with non-stick spray and repeat on the other side.

Bake at around 350 for 10-15 minutes until done all the way through.

Makes 1 chicken breast, multiply for your family. I made extra for salad for lunch tomorrow.

    i used 2 breasts (each cut in thirds), honey mustard instead of Dijon & McCormick "Pepper seasoning" instead of red pepper flakes (~1/2 tsp). Took about 25 mins. to cook thoroughly - 2/6/08

    I tend to like heat, but my family doesn't. I left out the red pepper flakes. In the end, everyone loved this, including me. Very simple and tasty recipe. The cooking instructions as given leave the chicken undercooked. I ended up doing about 37 minutes, with the last 5 at 375 degrees. - 11/25/13
