1 C chopped dates3/4 C chopped pitted prunes1/2 C raisins2 eggs1 1/4 C water1 tsp vanilla1 C whole wheat flour1 tsp baking powder1 tsp baking soda1/4 tsp salt1/2 tsp cinnamon1/4 tsp nutmeg1 C chopped nuts
Combine dates, prunes, raisins and water in medium saucepan. Heat to boiling, reduce heat and simmer, uncovered, until fruit is tender and water absorbed, about 10 min. Remove from heat and cool. Mix eggs and vanilla into fruit mixture: Combine flour, baking soda and powder, salt, cinnamon and nutmeg. Add to fruit mixture, add nuts. Spread batter evenly in grease baking dish, 11x7x2 inches, Bake in preheated 350 degree oven until cake springs back when touched lightly 30- 35 min. Cool on wire rack and cut into squares.
