Eggplant, fresh, 1 eggplant, peeled Tahini, 2 Tb.Garlic, 3 clovesLemon juice, 1 tbsp Salt, 1/2 tsp.pepper to taste
Directions
roast whole eggplant in 350 degree oven (cut slits. or puncture a few holes). roast till soft, like a flat tire. about 30-60 minutes. Cool, peel, blend with other ingredients in cuisinart.
