Spinach Parmesan Balls

1 pound pkg frozen chopped spinace, thawed5 eggs1 large onion, minced (or onion powder)10 T butter (nutritional info is for Earth's Balance)1 1/4 C shredded Parmesan cheese3 cloves garlic, minced3/4 t dried thyme leaves3/4 t cayenne pepper1 1/2 C Italian style bread crumbs
Preheat over to 350 degrees F
Squeeze the excess water from the spinach and put it in a large mixing bowl.
Add the remaining ingredients and mix well by hand.
Form the mixture into 1-inch balls (I found letting this chill for about 20 minutes helps with the forming of the balls).
Place the balls closely together on a baking sheet.
Cook in the top half of the oven until firm to the touch, about 20-25 minutes. Let cool 5 minutes, then transfer to a platter and serve immediately.
Makes about 65 balls, serving size is 5 balls. Nutritional info uses Earth's Balance instead of Butter and is about 40 calories per ball.
