Spicy Bacon n' Lentil Soup

Ingredients
4 slices smoked bacon, diced1/2 cup each diced celery, onions and red peppers2 tsp each minced garlic and serrano chili pepper2 Tbs. double concentrate tomato paste1 cup dry green lentils2 large vegatable boullion cubes3 parsley sprigs
Directions
In saucepot over medium heat, cook bacon 4 min or until crisp. Remove and discard all but 2 Ybs drippings.

Add next 3 ingredients to drippings in saucepot; cook 4 minutes. Stir in garlic, chili pepper and tomato paste. Cook 30 seconds. Add remaining ingredients and 6 cups of water.

Increase heat to high and bring to a boil. Stir in 1/2 bacon. Reduce heat to medium; let simmer 45 minutes or until lentils are tender. Remove and dscard parsley. Sprinkle with remaining bacon.
