Mashed Beans

Ingredients

2 cups pinto beans4 cups water (must cover top of beans by two inches)1/4 tsp olive oil1 tbsp garlic powder1/2 tbsp Kosher salt1 tsp black pepper
Soak beans overnight in water. Rinse beans and check for any bad ones.
*You can cook these in the crockpot or on the stove. I opt for stove top because I mash them.
Put beans in a small stock pot, add water to cover beans generously and add the olive oil, cover. Bring to a boil, reduce to simmer and cook for 1 to 2 hours. Mine take almost 2 hours.
Drain off all the water, retaining about 1/4 cup for later. Add the garlic, salt and peppr then mash beans, I use a hand blender. If the beans are too thick you can thin them with the reserved water from earlier.
Use for making tostado's, burrito's etc.
