Chicken and Mandarin Salid

3-3oz cans White Chicken Breast1/2 to 1 C Snow Peas, chopped1/2 to 1 C Red Bell Pepper, chopped1/2 to 1 C Yellow Bell Pepper, chopped1 Tbs Jalapeno pepper, diced into small pieces (about 4 slices from one pepper)2 Tbs Ground Flaxseed1/2 C Carrots, chopped into thin slices3 Clementine Mandarin Oranges, sectioned and cut in half1 Tbs Extra Virgin Olive Oil3 Tbs Lemon Juice1 Tbs Apple Cider Vinegar
Mix all chicken, chopped peppers, chopped snow peas and chopped carrots in medium to large bowl. Add in Clementines and mix lightly to release the juice from the oranges. Add flax seed, olive oil, lemon juice and vinegar. Mix to distribute and refrigerate for 1 hour.
Can substitute almost any vegetable on hand. Add more or less lemon and vinegar to taste.
