Lynne's Roasted Vegetables

Cauliflowerbrocollimushroomsonionsgarliccayenne or red peppersextra virgin olive oil
Chop up vegetables into large chuncks and place in a large bowl. Mushrooms (use whole). Then add fresh garlic, Olive Oil, and Cayenne pepper (optional). Salt and pepper is optional. You can also vary with different vegetable and just reduce the amount from 2 cups to 1 cup when adding additional vegetables. I use what I have in the house and what is in season. Recipe is also good with summer squash and zucchini.
Bake large roasting pan, (spray with Pam) if needed. Bake in oven at 375 degrees for approximately 45-60 mintues or until done. Stir occasionally while roasting to evenly roast the vegetable.
