Vegetarian Boston Baked Beans (for Crockpot)

2 cups great northern beans6 cups water2 tsp dry mustard5 tbsp dark brown sugar4 tbsp molasses1 tsp salt (optional)
Place beans and water in pot on top of stove - bring to boil - boil 2 minutes. Turn off heat, cover pot, and allow to sit for 1 hour.
Place beans and water in crockpot. stir in mustard, sugar, and molasses. Cover and cook on high for six hours. If beans are too soupy at end of cooking time, uncover crockpot and allow it to cook without cover to evaporate some of the liquid (watch the beans to make sure they don't burn, though!). Stir in salt to taste.
Makes 8 servings.
