Buttermilk Apple cake

Ingredients
1/4 c. soft margarine2/3 c packed brown sugar1.5 c. buttermilk1 c all purpose flour1 c whole wheat flour1 tsp baking poweder1 tsp baking soda1 tbls cinnamon1/2 tsp salt2 medium apples, (cored and finely chopped (about) 2.5 cups)TOPPING1/4 c. packed brown sugar2 tsp cinnamon2 tbls chopped nuts
Directions
spray 9" pan

In large bowl, beat together margarine and sugar until combined: beat in buttermilk. Add flours, baking powder, baking soda, cinnamon, salt and apples: mix until combined. Spread batter evenly in pan.

Topping: Combine sugar, cinnamon and nuts. Sprinkle over batter. Bake in 350 degrees oven for 40 to 45 minutes or until toothpick inserted in center comes out clean. Let cool in pan. Makes 12 servings.

    I found this recipe in my Lighthearted Cookbook by Anne Lindsay and instead of using buttermilk, I used no fat plain yogurt and brown sugar splenda, it is a real good cake and I will make it again and it freezes nice. - 7/22/08
