1-2 cups chopped mushrooms3 medium red tomatoes2 bunches fresh spinach1 can diced tomatoes1 can tomato paste2 green bell peppers4 boneless skinless chicken breasts1 cup red wine1.5 large white onions3-5 cloves garlicpam2 tsp basil2 tsp rosemary1 tsp thyme1 tsp cayenne pepper2 bay leavessaltpepper12 green olives
Spray skillet with Pam and heat. Brown chicken breasts (about a minute on each side) and set aside. Add chopped mushrooms, peppers, onion, olives, garlic and spinach to pan and sautee until onions are translucent (about 10 minutes). While the vegetables are cooking, chop the tomatoes. Add wine, tomatoes, tomato paste and 1.5 cups water to the vegetables. Add spices to mixture and stir. Add chicken breasts and cook for 5-10 minutes until cooked just through. Remove chicken breasts and let cool. Once the chicken is cool, shred the chicken and return it to the vegetable mixture. Serve over whole wheat pasta with parmesan cheese. Makes about 6 servings (of about 1.5 cups).
