Mediterranean Couscous Salad

Ingredients
.5 Cup Sun Dried Tomatoes1.5 Cups Vegetable Broth1.5 cups Couscous.5 Cup Reduced Fat Feta Cheese1 Cup Chopped Parsley2 - 6oz Jars of Marinated Artichoke Hearts with marinade
Directions
Soak sundried tomatoes in boiling water for 15 minutes, until soft & then chop. Cook couscous according to directions, with vegetable broth. Mix tomatoes, couscous & rest of the ingredients in a bowl. Season with black pepper.
