Homemade veggie lo mein

Ingredients
* Sesame Oil, 2 tbsp * Broccoli, fresh, 2.50 cup, chopped * Celery, raw, 1 stalk, large (11"-12" long) chopped thinly * Baby Carrots, raw, 5 medium chopped thinly * Bok Choy, raw-shreaded, 1.50 cup * Raw White Onion (Serving = 1 medium Onion), 0.30 serving chopped * Fresh Zucchini small (4.2 oz), 1 serving chopped( you can substitute whatever you like for other veggies in this recipe)178 grams soba noodles5 tbsp soy sauce (more/less to taste)1 packet mongolian beef seasoning
Directions
Cook soba noodles per package instructions, In separate pan saute all veggies except onion in sesame oil soy sauce, and seasoning packet. When veggie fork tender add noodles and onion and cook for 2-3 more minutes until onion begins to get translucent.
