Savoury Zucchini Muffins

2 lbs fresh zucchini, coarsely grated3.5 oz. feta cheese, crumbled2 large fresh eggs, beaten1 cup chopped onions or spring onions1/4 cup breadcrumbs from whole wheat bread3 tablepoons semolinalots of chopped fresh peppermintsalt and pepper to taste
Make sure you drain the zucchini thoroughly, pressing it on a fine mesh. And again. And again.
Then, mix all the ingredients together, in a large bowl.
If your mixture is still runny, add some more breadcrumbs to absorb the liquid.
Spoon into a 12-hole muffin tin.
Cover with aluminum foil and bake at 350 F for 30-40 minutes. Uncover for the last 5-10 minutes of baking, to get a nice golden color.
