Best No-Sugar Cookie Ever

Ingredients
4 medium ripe bananas1 1/3 c old fashioned rolled oats1/2 c unsweetened applesauce1 1/2 c mixed dried fruit (dates, craisins, raisins, blueberries)1 c chopped walnuts1 tsp cake or pie spice mix (cinnamon, cloves, nutmeg, anise)1 tsp vanilla extract1 tsp dried lemon peel (or 1 T fresh)dash of salt
Directions
Preheat oven to 350 F.

Mash bananas in mixing bowl. Add all other ingredients, mix well. Let sit for 15 minutes to hydrate.

Scoop mixture by heaping teaspoons or a small disher onto parchment paper lined cookie sheet. Press down lightly (these do not spread on their own).

Bake for 20 minutes or until lightly browned.
