Scattered, smothered and covered hashbrown and turkey casserole

1 Tbls olive oil1 onion- diced(1.5 cups)1 package lean ground turkey(20oz)8 oz chopped white mushrooms1 Tbls onion powder(or granulated onion)1 teas Cavender's greek seasoning(or any season salt)1 Tbls "better than Bullion" Low sodium- beef flavor dissolved in 3 Tbls water**or you could substitute 3 cubes(or equivalent) beef bullion dissolved in 3 Tbls water- but adjust your sodium.33 cup fat free sour cream3 cups chopped broccoli flouretsone 32oz bag ore-ida southern style hashbrown potatos( or any hash brown with no oil added- shredded potatos will also work!)3 oz extra sharp grated cheddar cheese
Preheat oven to 350
in a large pot place onion, mushrooms, turkey, cavender's, oil, and onion powder- cook-stirring and breaking up turkey) until onion is tender and turkey is browned(about 10 minutes)
Add bullion dissolved in water, and sour cream- mix well and remove from heat.
Spread broccoli into bottom of a 9x13 casserole dish. Spread turkey mix evenly over broccoli and pat down to form flat top.
Sprinkle bag of potatos over top and then sprinkle cheese over potatos.
Bake at 350 about 55-75 minutes or until potatoes are slightly browned. ( if you can't get them to brown- spray with cooking spray and cook 10 minutes)
Make a long slice lengthwise then 3 cuts across to divide into 8 hearty portions! This is not a firm casserole- more like a "scattered and covered" style dish like at IHOP- I love ketchup on this one too!
Freezes well if you want to make ahead- just adjust cooking time an additional 20 minutes or so.
*** you can substitute any green veggies for broccoli.Green Beans Asparagus, artichokes- even peas all work well. If using a "wet" veg like squash- saute it before adding turkey mix or your casserole will be soupy!
