Cucumber, Green Bean & Tomato Salad

Ingredients
Dressing:1/4 tsp salt1/4 tsp sugar1/4 tsp pepper1 clove garlic, minced1 tbsp extra virgin olive oil1 tbsp balsamic vinegar1 tbsp lemon juiceVegetables:1 cucumber, peeled, seeded and diced3 tomatoes, seeded and chopped5 oz. green beans, cut in 1" lengths and lightly steamed until crisp-tender.
Directions
Whisk together dressing ingredients until well blended.
Toss vegetables in a large bowl.
Pour dressing over vegetables and toss to blend.
Chill before serving.

    This was so great! My husband tasted it and said "wow - you should make this for company!" We devoured the whole thing. One tip would be to make sure that you do take out the seeds and liquid out of the tomato and cucumber. It makes it a bit watery with them in. - 8/8/10
