Smooth Black Bean Soup with Spicy Sausage

Ingredients
2 tbsp. olive oil1 small onion3-4 scallions2 mini bell peppers4 cloves minced garlic 4 cups chicken broth3 cans black beans (rinsed)5 oz. spicy sausage, cubed with casing removed1 tsp lime juicesalt and pepper to taste 1 tbsp guacamole for garnish
Directions
In a large saucepan, sautee onions, peppers, scallions and garlic until softened (5-7 minutes). Add cubed sausage and stir. Sprinkle lightly with salt and pepper. Add black beans. Cook over medium heat til hot, stirring once in awhile.

Transfer the mixture to your blender or food processor. Puree til smooth. Return to saucepan and add chicken broth. Stir well. Bring to a boil, reduce heat, cover and simmer about ten minutes. Ladle into bowls and add guacamole to each.
