Chicken Chili (Barefoot Contessa)

Ingredients
1 tbsp olive oil2 cups of finely chopped onions2 red bell peppers, chopped into bite sized pieces2 yellow bell peppers, chopped into bite sized pieces2 cloves garlic, minced1 tsp chili powder1 tsp ground cumin1/4 tsp red pepper flakes1/4 tsp cayenne pepper2 tsp salt1/2 tsp pepper2 28 oz cans of diced tomatoes, with juice (no salt added)4 chicken breasts, cooked, cut into bite sized pieces
Directions
Cook chicken in a baking dish in oven and then cut into bite sized pieces, set aside.

In a large soup pot cook onions in olive oil until translucent, then add garlic and cook for 1 more minute. Add the peppers, spices, and tomatoes and bring to a boil, then reduce heat and simmer for 20 minutes. Add chicken and continue cooking another 20-30 minutes. Serve with no-sugar added corn bread or by itself. Freezes well too!
