3 Tbsp. organic Butter, salted 2 Tbsp. Organic Olive Oil1 large sweet onion, chopped1 organic Leek, thinly sliced or chopped (white and 1/3 of green)4 cloves Garlic, minced1/2 bunch fresh Parsley, chopped6 medium fresh tomatoes, slicedAbout 12 - 13 cups homemade Fish Broth [or use half chicken broth and half fish or clam broth]1 cup White Wine (we use alcohol-free variety)18 ounces fresh wild-caught Pacific Cod fish, cubed16 ounces fresh oysters12 ounces salad shrimp2 Bay Leaves1 Tbsp. dried Basil1/2 tsp. dried Thyme1/2 tsp. dried Oregano
Over medium-low heat, melt butter and olive oil in large stockpot. Add onion, leek, garlic and parsley. Cook slowly, stirring occasionally until the onion and leek are soft.
Add tomatoes to pot. Add fish broth, bay leaves, basil, thyme, oregano, and wine. Mix well. Cover and simmer 30 minutes.
Stir in the cubed fish. Bring to a boil. Lower heat, cover, and simmer 5-7 minutes until done [fish flakes easily].
Makes about 5 qts: 12 - 13 servings (1.5 cup each)
