Buttermilk Pancakes

Ingredients
Beat egg in small mixing bowl with fork. Beat in buttermilk and oil.In large mixing bowl, stir together flour, sugar, baking powder, baking soda and salt. Add egg mixture to flour mixture. Stir until blended but still lumpy.Warm griddle or heavy skillet over medium-high burner. When warm, lightly grease griddle or heavy skillet. (Greasing not necessary if you are using a non-stick skillet.) Pour 1/4 cup batter on griddle. When pancakes have a bubbly surface and slightly dry edges, turn to cook other side.Refrigerate any leftover batter for use the next day.
