Orange Raisin Bran Muffins

Ingredients
1/2 cup egg substitute3/4 cup orange juice1 tbsp vegetable oil2 cup raisin bran cereal3/4 cup dates, pitted and chopped1/4 cup brown sugar, firmly packed1 cup self-rising flour
Directions
Preheat oven to 400*
Whisk egg substitute, orange juice and vegetable oil together.
Add cereal and dates to wet ingredients.
Allow to stand for 10 minutes.
Mix in flour and brown sugar until dry ingredients are moist.
Fill a greased or paper lined 12 cup muffin tray.
Each cup needs to be filled about 2/3 full.
Bake for 15 minutes or until a toothpick inserted in the center comes out clean.
Cool slightly before removing from tray.

    i also used whole wheat flour ( why use white?) and i used applesauce and decreased the brown sugar in half - 2/9/08

    This sounds yummy. And too much sugar does not immediately turn to fat, that is a misconconception. Not enough room here to get into it. This recipe could be 'healthified' quite a bit but you could eat one muffin without the sugar turning to fat. - 1/6/12

    You could use a baking blend instead of regular brown sugar - and 1/4 cup isn't all that much. Any starch/protein will be stored as fat if you don't use it! Not just sugar. You could use whole wheat flower and applesauce too and cut more calories. I'll keep this recipe in mind. Thanks! - 2/9/08
