Mediterranean Couscous Salad

*Note--this is not an original recipe, just something I have adapted.1/2 c. whole wheat couscous1/2 cup water1/4 cup lemon juice1 Tbsp. extra virgin olive oil1/2 cup shallot, finely chopped 1 garlic clove1/4 c. julienned spinach1/2 c. italian parsley, chopped1/2 c. cucumber, chopped1/2 (or a little more) cherry tomatoes, halvedSalt and pepper to taste
1. Bring 1/2 cup of water to boil, add dry couscous. Turn off heat and cover immediately, let steam for 6 minutes. Fluff couscous with a fork and transfer to a bowl to cool.
2. In a small bowl, whisk together lemon juice, olive oil, salt and pepper. Add to couscous once it has cooled.
3. Add chopped shallots, spinach, parsley, and the garlic clove (minced). Mix well.
4. Add cucumbers and tomatoes. Toss.
Makes 4 side servings or 2 lunch portions.
