Peach and Pecan Scramble

1 tsp olive oil1/2 medium peach, diced2 T chopped pecans2 eggs1 T unsweetened applesauce1/8 tsp ground cinnamon
Makes 1 serving
Heat olive oil in small skillet over medium heat.
Dice peach / chop pecans - Add to skillet and stir fry 2-3 minutes or until peaches soften.
Meanwhile: Crack eggs in bowl, add applesauce and cinnamon. Beat well.
Add egg mixture to skillet. Mix often.
When eggs set, serve and enjoy.
