LOW CAL, LOW FAT PUMPKIN PIE

Ingredients
1 can (12 oz.) evaporated skim milk 1/2 c. sugar 1/2 c. thawed frozen cholesterol-free egg product 1 1/2 tsp. cinnamon 1/2 tsp. nutmeg 1/4 tsp. ginger 1/4 tsp. salt 1/8 tsp. cloves 1 tsp. vanilla 1 unbaked 9" pie shell
Directions
Preheat oven to 350 degrees. Beat all ingredients in a large bowl with electric mixer until smooth. Pour into pie shell. Bake 50-55 minutes or until knife inserted in center comes out clean. Cool on wire rack. Chill for 4 hours, more or less and serve. Garnish with non-dairy whipped topping, if desired.
