Sunshine Snack Bars

Ingredients
Directions
2 cups raw grated carrots1/4 cup diced dried apricots1/2 cup raisins or golden raisins2 cups quick cooking oats1/2 cup chopped walnuts1/2 tsp. cinnamon12 oz. frozen apple juice concentrate (thawed)
Preheat oven to 350 degrees.
Combine first 6 ingredients in bowl.
Add apple juice concentrate and stir well.
Press ingredients into a greased 9×11 glass baking dish.
Bake for approximately 40 minutes, until bars are brown.
Cool completely before slicing.
Makes 12 bars.
