corn flake crusted, oven fried catfish

Ingredients
1 1/2 tsp paprika1 tsp granulated garlic1/2 tsp ground red pepper1 pound cat fish 1/2 c buttermilk1 tbl lemon juice2 c crushed corn flakes
Directions
Preheat the oven to 450
Spray a oven proof cookie cooling rack with vegetable cooking spray. Place on baking tray.
In a small bowl mix spices and sprinkle over both sides of the fish
Dip fillet in buttermilk, then cornflake crumbs.
Arrange on cooling sheet, 1 " apart
Bake for 20 minutes or until fish flakes easily
