6 frankfurters6 hot dog duns, split open2 tablespoons butter at room temperature1/3 cup shredded cheddar cheese1/3 cup chopped red onionFOR THE CHILI2 tablespoons corn oil1 small onion, chopped1 small green bell pepper, seeded and chopped1/2 pound ground beef1 cup tomato sauce1/2 drained canned red kidney beans2 teaspoons chili powder, or to tastesalt and pepper
For the chili, heat the oil in a skillet. add the onion and green bell pepper and cook until softened, about 5 minutes. add the beef and cook until well browned, stirring frequently and breaking up lumps with side of a wooden spatula. stir in the tomato sauce, beans, chili powder, and salt and pepper to taste. cover the pan and simmer 10 minutes. meanwhile, put the frankfurters in a saucepan and cover with cold water. bring to a boil. remove from the heat, cover and let stand 5 minutes. spread both sides of each hot dog bun with the butter. fry in a hot skillet until golden brown on both sides. to serve, put a frankfurter in each bun. top with chili and sprinkle with cheese and onion. serve immediately.
