Tuna & Feta Green Salad

Ingredients
1 can of tuna, in water, drained1/4 cup of crumbled feta cheese2 cups Mixed lettuce leaves, torn1/2 cup cucumber, sliced1/2 cup green bell pepper, sliced1/4 cup sliced red onion1 tsp olive oil1 tsp cider vinegarsalt and pepper to taste
Directions
Combine all ingredients together and toss. Serves 2.

    This was good! I used my fresh garden lettuce. I didn't have any garden tomatoes, so I used a roasted red pepper for color. It begged for some garbanzo beans, so I obliged with 1/4 c and threw in a few fancy olives leftover from a previous recipe. It was good and filling. Thanks for the recipe! - 5/18/12
