Ingredients
Directions
1 dozen eggs1 cup 2% milk1 cup ricotta1 cup shredded cheddar1 cup shredded mozzarella1 serving cooked turkey bacon 1 pkg frozen spinach1/4 cup cooked white rice3 frozen pie crusts
Mix everything, except the crust :), in a large mixing bowl, stir until loosely combined. I have three sons...I don't have time for complicated. Pour into frozen pie crusts. Bake at 400 degrees for 35-40 min. makes 3 quiches (8 pieces each). I thought I would be serving one and freezing two, but my family loved it so much, I was lucky to freeze one.
This also a good recipe to make with kids. I let the 11yr old grate cheese, 4yr old and 2yr old+, each added in cheese, bacon, spinach, rice(no "raw" meats to handle). They love to toss things into the bowl. Sometime soon I'll have to create a recipe with more fractions for math practice along with nutrition lesson.
