Ratatouille with a twist

Courgette, medium, chopped small Egg Plant, medium, chopped smallWhite Onion, 160 gram(s) Garlic, 2 clove small Tomato, 6 Chopped small Olive Oil, 1 tbspFlax oil, 1tbspSalt and pepper to taste
Chop onions and garlic, add the oil to a pan keep on medium heat and add the onion and garlic, slowly cook until onions are soft.
Chop up the courgette, add to the pan with the onion and garlic. Put a lid on the pan and allow the cougettes to soften.
Once the courgette is soft add the egg plant and cook for a further 5 minutes.
Chop the tomatoes, add to the pan. Cook for 5 min
Add the aubergine dip ( this can be store bought, can use any sort of vegetable dip you fancy. Let the mixture simmer for 5 min and serve hot !
Can be frozen once cooled down.
