Candied Fruit Peel

3 firm ripe lemons or oranges or citrons1/4 cup granulated sugar1/2 cup water
Step 1:
Using a swivel-bladed vegetable peeler, remove peel from fruit, leaving behind bitter white pith. Using a sharp knife, cut peel into strips.
Step 2:
Place strips in a small saucepan and cover with cold water. Bring to a boil, drain, and refresh under cold running water. Return to the saucepan, add sugar and water, and cook over moderate heat until liquid has evaporated and peel is bright and shiny.
Step 3:
Spread peel on a sheet of foil to cool, separating strips. Store in a sealed jar in the refrigerator. Candied peel will keep up to 6 months.
Makes 2 cups (1 cup per serving)
