Quinoa with Salsa and Black Beans

Ingredients
2 tbs olive oil1 C dry quinoa1 C salsa2 C water1 can black beans, rinsed and drained
Directions
1. Heat oil and brown quinoa
2. Mix in salsa and water and bring to a boil. Add beans, cover and simmer for 20 min (or until quinoa is tender and most of the liquid is absorbed)
