Chicken Riggies

Ingredients
1.5 lb chicken breast, diced2 large cubanelle peppers1 cup roasted peppers1 medium red onion3 cloves garlic1/2 c. red wine28 oz crushed tomatoes1/2 cup cream1 cup grated parmesan cheese
Directions
Cook pasta according to directions. Strain and put back into pot.

Add olive oil to large saucepan and heat up on medium high heat. Add chicken and salt and pepper to taste. Cook until done, stirring occasionally to make sure chicken is cooked on all sides.

Meanwhile, dice onions, garlic and peppers. Once chicken is done, all all vegetables to the pan. Saute for 5 minutes until vegetables soften. Add red wine. Let cook down for about 1-2 minutes. Add tomatoes and siracha. Allow to simmer for 10 minutes or so.

Add sauce to pasta and combine. Add cream and parmesan cheese and stir to combine.
