Raw Lemon Cashew Cookies

2C of Almond Pulp1C of soaked Raw Cashews1/4c of Raw Agave1/4c of Lemon Juice ( I used Meyer Lemon)Rind from 1 lrg Lemon (I used a Meyer Lemon)10 Medjool Dates
I placed all ingredients - Pulp, Cashews, Dates in a Food Processor I then added the lemon rind, lemon juice and agave and pulsed to a fine dough like consistency.
1 tablespoon of dough and shaped them into medallion like cookies and placed in the Dehydrator for 8-10 hours or as long as you would like.
They calories might be a little off because I wasn't not able to find an item that said pulp so I used raw almonds inplace of it
