Kathy Perrins Whole Wheat bread

Ingredients
5 cups warm water1/2 cup oil1/2 cup honey2 tbsp salt2 tbsp yeast1/2 cup gluten flour12 - 14 cups whole wheat flour
Directions
Add oil, honey, salt to mixing bowl. Add warm water. Add 5 cups flour and the gluten flour, Mix and then add yeast, mix. Wait about 10 min. and then add the rest for the flour, 1 cup at a time with mixer running, until the dough pulls away cleanly from the edges of the mixing bowl. Knead for 10 min, and let rise to double size. Shape into 4 loaves, put into bread tins, let rise and bake at 350 degrees for 35 min (longer at high altitudes). Cool and cooling rakes.
