Spiced Mixed Nuts

1/2 cup raw pecans1/2 cup raw almonds1/3 cup shelled raw pistachios1/3 cup raw cashews1/3 cup shelled raw pumpkin seeds1 TBSP pure maple syrup1/2 tsp curry powder1/8 tsp cayenne pepper, or more to taste1/2 tsp dried rosemary1/4 tsp saltcooking spray
Preheat the oven to 325. Combine the nuts and seeds. Add the maple syrup, spices and salt and toss to combine.
Coat a baking sheet with cooking spray, then transfer the coated nuts to the sheet and spread evenly in a single layer. Bake, stirring once, until the nuts are fragrant and lightly toasted, 15 to 20 minutes. Remove from the oven and cool. Keep in airtight container in refrigerator for up to 2 weeks.
