Mayo substitute (with tofu)

Ingredients
Makes 1 cup (= 16 tablespoons)1 cup silken firm tofu2 tbsp lemon juice2 tbsp extra virgin olive oil3 cloves minced garlic� tsp salt� tsp black pepper ground
Directions
Combine all ingredients together in a blender until smooth.
Store in an air tight container for at least one day before using. Lasts as long as your jar of mayo would in the fridge!
