Oriental Tofu Soup - homemade

Ingredients
1/2 block tofu, cubed2 tsp ginger root, minced 2 cloves garlic, minced 1 tbsp peanut oil1 large mushroom, diced1 sm stalk celery, dicedGreens from 3 outer bok choy leaves4 c water1 tsp lite soy sauce1/2 tbsp oyster sauce1/2 tbsp fish sauce4 small scallions, diced
Directions
Saute ginger and garlic in peanut oil to release flavors. Add tofu and cook for 3 mins. stirring occasionally. Add mushroom and celery, cook for 1 min. Add water, bring to boil. Add bok choy, soy, oyster and fish sauces, and then simmer for 5 mins. Add diced scallions to bowl when serving. Serves 2.
