Quinoa w/ spinach & sundried tomato

Ingredients
1 cup quinoa rinsed2 cups fresh spinach1/4 cup dried tomatoes2 cups 99% fat free chicken broth1 green onion chopped2 cloves garlic minced1 Tbs Olive oil1/8 tsp cayenne peppersalt & pepper to taste
Directions
Saute onion & garlic in Olive oil 1 minute. Add chicken broth, quinoa, cayenne and dried tomatoes. Bring to boil. Add spinach and pepper and stir. Cover and simmer until quinoa is is tender about 15 minutes. season to taste
Makes 4 1 cup servings
