Ingredients
2lbs Yukon Gold Potatoes, peeled, large dice/chinks1lb Yellow Onions, peeled, large dice/chop3 Garlic Cloves, minced3x14.5oz /412ml cans Chicken Broth1tsp Freshly Ground Black Pepper or more to taste1tsp Sea Salt
Directions
Peel & chop onions & potatoes. Place in slow cooker with remaining ingredients. Cook on Low setting for 4 or more hours. Remove approximately 2 cups of potatoes, trying to leave onions behind. Put divided potatoes into blender or use hand mixer to puree. Return pureed potatoes to slow cooker & give a good, gentle stir.
Turn slow cooker to Warm or lowest setting & simmer for 15 minutes or so.
