Vegetarian Kimchi Doenjang Jigae

Ingredients
2 cups vegetable broth2 cups kimchi4 sliced new potatoes1 sliced zucchini2 tsp soy sauce1 tsp mirin or shiaoxing2 chopped scallions15 grams butter1 block extra firm tofu1 small onion4 cloves garlic2 tbsp gochujang2 tsp doen jang or white miso
Directions
1. Soften onions in veggie broth.
2. Add kimchi. garlic, and all wet ingredients. Bring to a boil.
3. Add vegetables and tofu.
4. Simmer for ~20 minutes.
5. Add scallions and butter, then serve immediately with a side of rice.
