Creamy, Cheesy Potatoes

1000 Kg potatoes - waxy ones are best1 medium onion4 cloves of garlic75 grams of cheddar cheese200 ml single cream100 ml semi skimmed milk1 tsp djion mustardSalt & pepper to season
Peeal & thinly slice the potatoes
Chop the garlic & onion
Mix the milk and cream together with a teaspoon of mustard and salt & pepper to season.
Chop the cheese into small chunks (doesn't matter hoiw small it is going to melt anyway).
Place a layer of the potatoes in a baking dish.
Place a layer of garlic, onions and cheese
Place another layer of potatoes and continue until you get to the top of the dish.
Press down with your hands before pouring over the milk/cream mixture
Bake for an hour on gas mark 6.
