1 Cup Soy Flour1/2 Cup Sugar2 tsp. baking powder1 tsp. cinnamon1/2 Cup Silk Soy Milk, Lite1 tsp. vanilla extract1 egg1/4 cup chopped walnuts3/4 cup chopped zucchini
Mix all ingredients together (adding zucchini and walnuts at the end)
Drop by tablespoon into greased or lined cupcake pan
Bake at 375 degrees for 15 mins.
