Mom's No Bake Cookies (1 cookie = 1 serving)

2 cups white granulated sugar1/2 cup fat free milk1 teaspoon vanilla extract3 cups Quaker 1-Minute Oats1 stick unsalted butter, cubed4 Tablespoons Hershey's Cocoa Powder3/4 cup JIF creamy peanut butter
In large saucepan, mix sugar and cocoa powder until blended. Add cubed butter and milk. Bring to a boil while stirring constantly. Boil for one minute. Remove from heat and add peanut butter and vanilla. Stir until well blended (peanut butter will "melt" into chocolate mixture). Add oats and stir until well coated.
On wax paper, drop scoops of cookie mixture. (I use a small cookie dough scoop and was able to get 36 cookies).
Let stand until cookie are cool and set. Keep in an airtight container.
These are really good with a cold glass of milk.
