lobster spaghetti

Ingredients
2 C cooked lobster1 Tsp dried thyme1 Tsp Old Bay Seasoning1 Tsp crushed red pepper flakes (or to taste)1 Oz extra virgin olive oilI medium sweet onion, diced5 cloves garlic, minced1 C white wine2 C fat free half and half1 C sliced mushrooms10 Oz Frozen cut leaf spinach, thawed3 Oz roma tomatoes, diced1/4 C sun dried tomatoes, chopped1/2 Tsp pepper8 Oz spaghetti, cooked according to directions
Directions
heat olive oil in large pot. Saute onion over medium heat until translucent, aprox 4 mins. Add mushrooms and garlic and saute for another min., add wine, thyme, bay seasoning, pepper flakes, and pepper. Bring to a boil, cook for 8 mins. Add half and half and bring to a boil for 7 mins. add spinach and tomatoes, bring to a boil. Add lobster to reheat. Partly coat cooked spaghetti with sauce, top with lobster and remaing sauce. Makes 4 servings
