sirloin black bean tacos extra lean extra yummy

Ingredients
24 taco shells (4 tacos per adult, 2 per child - 2 day meal)ground sirloin 1 lb1 can black beans drained1 medium onion 1 large red pepper diced1 clove garlicchilli powder to tastecumin to taste2 medium tomatoes diced (one per day)2 cups fresh spinach leaves (one cup per day)2 cup low fat shredded mexican cheeses (one cup per day)brown the ground sirloin and the onion, red pepper, and garlic cloves all in a pan together until the sirloin is brown, add the spices and beans and warm through. Divide this into 2 and set aside half of it for tomorrow's lunch.Toast the taco shells (1 box of 12) in the toaster oven or oven to crisp up. Use the second box of 12 for lunch the next day.top with diced tomatoes, spinach leaves, salsa and cheese.First day dinner my husband and I eat 4 tacos each and my 2 kids have 2 tacos each...then we have the left overs and eat the second half for lunch the next day. I have found this to be the easiest method for my busy schedule so most of my recipes are 2 day meals.
Directions
makes 24 tacos... for 2 day meal, 12 tacos for dinner and 12 for lunch the next day. Serving cal is per taco so when you put it in your log be sure to put how many tacos you will eat.

My husband and I usually have 4 tacos and my 2 kids have 2 tacos each... 12 tacos per day.
