Gluten Free Sugar Free Low Carb Chocolate Chip Cookies

Ingredients
13 oz Honeyville Grain Blanched Almond Flour1/2 cup Erythritol Sweetener1/2 tsp salt1/2 tsp baking soda1 egg1 stick salted butter1 Tbls vanilla1/2 cup Hershey's Sugar Free Chocolate Chips1/8 cup Water
Directions
Soften Butter, mix in egg, water, vanilla. In mixing bowl, whisk together almond flour, salt, baking soda, and erythritol. Add wet ingredients to dry, then stir in chocolate chips. Scoop with Pampered Chef small scoop onto parchment lined baking sheets. Should make @ 26 cookies. Bake at 350* oven for 10 mins. Turn on convection and bake for 2 more minutes, after switching rack positions of baking sheets. Enjoy.

    I used stevia and Carob chips instead, because thats what I had at the time I made them. They were very tasty. They didn't spread out much so when I made second batch I patted down top just alittle. They had a good texture and taste.The butter flavored them well.I will try with s/f chips next time. - 8/29/12
